Zucchini Fritters (GF)
1 large zucchini grated
90g haloumi grated
1 green onion thinly sliced
¼ cup parsley chopped
3 eggs whisked
1 cup gluten free plain flour
1 tsp baking powder
- Squeeze excess moisture out of grated zucchini. Combine with grated holoumi, green onion and parsley in a large mixing bowl.
- Add whisked eggs and stir to combine. Sift flour and baking powder into bowl and stir well.
- Heat fry pan to medium heat, spray with oil. Spoon fritter mixture onto pan and cook for 2 minutes each side.
- Serve fritters with poached eggs and rocket.
